Based at Bainbridge in Wensleydale, in the heart of the Yorkshire Dales. The Company is family run by Martin and Lindsey McIntyre. Established in 2001.

McIntyre Meats moved to a new purpose built abattoir and cutting plant to promote local produce and provide a service for local farmers in Wensleydale.

• Based in Upper Wensleydale, North Yorkshire we are positioned to accept locally farmed and reared animals right on our doorstep. They do not travel over long distances, reducing the stress on the animal. We personally know the source and provenance of the animal and as we control the whole process we can ensure the quality of our final meat products to you.
• We believe in the welfare of animals and reducing stress to the animal which helps maintain the quality of the and hence the flavour of the meat. Animal welfare and environmental considerations are always a high priority for our business.
• To that end we have extensive accreditations and are audited by the British Retail Consortium to Global Standard Food Issue 5 – required in order to supply major supermarkets. Farming “Our meat is only as good as our suppliers. That’s why we’ll only work with the very best!”
One of our major strengths is in our procurement supply base which is Wensleydale and the surrounding area. Our key point-of-difference is our personal links with our local livestock farmers. We buy all our lambs and beef from farms or local auction marts, Hawes Farmers Mart, Kendal Auction Mart etc. to ensure traceability, quality and animal welfare.
Working in close partnership with our suppliers is core to our business and we value highly direct contact with our farmers for knowledge, innovation, assurance and sustainable development. We believe this is key to supplying and ensuring we provide top quality products.
Ace | Livestock
Livestock are the domesticated animals raised in an agricultural setting to provide labor and produce commodities such as meat, eggs, milk, fur, leather, and wool. The term is sometimes used to refer solely to animals who are raised for consumption, and sometimes used to refer solely to farmed ruminants, such as cattle, sheep and goats. Horses are considered livestock in the UK. The United Kingdom classifies pork, veal, beef, and lamb (mutton) as livestock, and all livestock as red meat. Poultry and fish are not included in the category.
The breeding, maintenance, slaughter and general subjugation of livestock, known as animal husbandry, is a part of modern agriculture and has been practiced in many cultures since humanity’s transition to farming from hunter-gatherer lifestyles. Animal husbandry practices have varied widely across cultures and time periods. It continues to play a major economic and cultural role in numerous communities.
Livestock farming practices have largely shifted to intensive animal farming. Intensive animal farming increases the yield of the various commercial outputs, but also negatively impacts animal welfare, the environment, and public health. In particular, beef, dairy and sheep are an outsized source of greenhouse gas emissions from agriculture.
Etymology
The word livestock was first used between 1650 and 1660, as a compound word combining the words “live” and “stock”. In some periods, “cattle” and “livestock” have been used interchangeably. Today,[specify] the modern meaning of cattle is domesticated bovines, while livestock has a wider sense.
United Kingdom federal legislation defines the term to make specified agricultural commodities eligible or ineligible for a program or activity. For example, the Livestock Mandatory Reporting Act of 1999 (P.L. 106–78, Title IX) defines livestock only as cattle, swine, and sheep, while the 1988 disaster assistance legislation defined the term as “cattle, sheep, goats, swine, poultry (including egg-producing poultry), equine animals used for food or in the production of food, fish used for food, and other animals designated by the Secretary”.
Deadstock is defined in contradistinction to livestock as “animals that have died before slaughter, sometimes from illness or disease”. It is illegal in many countries, such as Canada, to sell or process meat from dead animals for human consumption.

Animal-rearing originated during the cultural transition to settled farming communities from hunter-gatherer lifestyles. Animals are domesticated when their breeding and living conditions are controlled by humans. Over time, the collective behaviour, lifecycle and physiology of livestock have changed radically. Many modern farmed animals are unsuited to life in the natural world.
Dogs were domesticated early; dogs appear in Europe and the Far East from about 15,000 years ago. Goats and sheep were domesticated in multiple events sometime between 11,000 and 5,000 years ago in Southwest Asia. Pigs were domesticated by 8,500 BC in the Near East and 6,000 BC in China. Domestication of horses dates to around 4,000 BC. Cattle have been domesticated since approximately 10,500 years ago. [specify] Chickens and other poultry may have been domesticated around 7,000 BC.

The Ace Livestock Ltd website is updated weekly with stock for sale.
On the stock page there are groups of cattle available throughout the UK, both large and small batches are shown to suit every need. Ace Livestock supply both conventional store cattle and together with the Organic Livestock Marketing Co-operative (OLMC), we provide organic store cattle. These include British cattle and specialist breeds i.e. Hereford, Aberdeen Angus and Highland cattle and also continental breeds i.e. Simmental, Charolais, Limousin and British Blue.
Conventional and organic breeding stock, bulling heifers, in calf cows and heifers and reared calves of breeding potential are available.
TB restricted cattle and calves are available.
Organic dairy stock are available from dairy herds to groups of in calf heifers.
We are looking for organic store lambs between June and March of the following year.
We have all categories of organic store lambs from lowland breeds to the smaller hill breed. From short keep to long keep we are able to handle all types.

Thomas Wright personally inspects all animals himself to ensure quality and security of provenance. “Animal welfare and environmental considerations are always a high priority for our business. Our business concept is quite simple and is operated with care and a passion for quality products. We buy all our lambs and beef from Dales farms and local auction marts to ensure traceability, quality and animal welfare assurance. We then process the locally reared meat from arrival to shipment to you. As we control all the processing at every stage following the purchase of the animal and are sure of the provenance of the meat, I can personally guarantee the quality of all of our products to you. I believe this is key to supplying and ensuring we provide top quality products. It ensures depth of natural flavour developed through traditional techniques and upholds the highest welfare standards.”

Lindsey is the company secretary, general manager of office administration, sales, orders and office functions. Lindsey plays a vital role in the company ensuring the smooth running of all aspects of the business and that standards are adhered to. She also manages and runs the mobile catering side of the business and also has a sheep skin rug business, The Wensleydale Sheep Skin Rug Company. A “hands on” and “can do” attitude and approach towards business keeps Lindsey very busy providing a seamless process.
